Quick and Easy Stir-Fried Spiced Red Cabbage with Apples

Ingredients

  • 225 g red cabbage
  • 1 cored apple
  • 25 g butter
  • 2 tsps oil
  • 1 small onion - chopped
  • 1 clove garlic - chopped
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • shavings of whole (or a pinch of ground) nutmeg
  • 1 tsp brown sugar
  • 1 tablespoon red wine vinegar
  • salt and pepper to taste

Quick and Easy Stir-Fried Spiced Red Cabbage with Apples

Method

  • Shred the cabbage quite finely, discarding any tough stalky bits.  Chop the apple up quite small leaving the skin on, but removing the core. 
  • Melt the butter and oil in a large heavy-based frying pan and stir in the onion and cook for 2-3 minutes before adding the apple and garlic.  Continue to cook for 2-3 minutes, then turn up the heat, add the cabbage and stir-fry it by keeping it on the move with a wooden spoon so it all comes into contact with the heat at the bottom of the pan.  
  • After 5 minutes or so the cabbage should have shrunk a bit, so add the spices and seasoning then turn the heat down and let it go on cooking for a further 10 minutes, stirring it a couple of times.  Try a piece to see if it’s tender.  If so, turn up the heat again, and sprinkle in the sugar and vinegar. Stir everything thoroughly & serve.
