Feta & Broad Bean Salad

Ingredients

  • 450g broad beans (podded weight)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 2 tbsp chopped mint
  • 750g feta cheese, broken into cubes

Method

1. Boil the broad beans for 6mins, cool off in water, pop beans out of the skins

2. Stir all the ingredients together, taking care not to break up the Feta any further.
