Courgette & Spinach Soup


  • 1 Medium sized onion
  • 1 large courgette
  • 1 medium sized potato
  • 4oz (100g) spinach
  • 2tbsp (30ml) oil
  • 2pt (1.2 litres) vegetable stock
  • Quarter of a pint (142ml) double cream
  • Salt & pepper to taste

Courgette & Spinach Soup


Chop the vegetables. Heat the oil in a large saucepan & sauté the onion and courgette until the onion is transparent.  Add potato, spinach & stock.  Bring to the boil, reduce heat, cover and simmer for 20 minutes.  Allow to cool before blending in small quantities in a liquidizer.  Return the soup to the saucepan, stir in cream and adjust seasoning to taste.  Reheat gently without boiling.
