Courgette & Lemon Cake


  • 200g (7oz) grated courgette
  • 150g (5oz) caster sugar
  • 1 egg
  • 125ml (4 fl oz) olive oil
  • 225g (8oz) self raising flour
  • 1 tsp ground cinnamon
  • 1 lemon

Courgette & Lemon Cake


  • Pre-heat oven to 160 C/Gas Mark 3. Grease a loaf tin.
  • In a bowl, beat together the sugar, egg & oil. Gently stir in the grated courgette.  Sift & fold in the flour & cinnamon.  Finally grate most of the rind of 1 lemon (reserving a little for decorating the icing).
  • Bake for 1 hour, or until a knife inserted into the centre of the cake comes out clean. Remove from the oven & turn out on to a baking tray to cool.
  • If desired, mix half & half butter/icing sugar & squeeze a little lemon juice, to make some icing. Spread over the top of the cake when cool.  Sprinkle with the reserved lemon rind.
