Celeriac & Parsnip Curry


Ingredients
- 1 large onion
- ½ or 2/3 of a celeriac
- 1 medium parsnip
- garlic
- Sunflower oil
- Curry powder
- Cumin seeds- roughly ground
- Coriander powder
- Turmeric powder
- Pinch salt
- 2 table spoons of Crème fraiche/sour cream or plain yoghurt

Celeriac & Parsnip Curry
Method
- Gently fry onion and garlic with curry powder and spices in a thick bottomed sauce pan.
- When onions are soft, peel and roughly grate the celeriac into the pan- add salt, mix thoroughly and put lid on pan and cook very gently for 5 mins
- Peel and roughly grate parsnip and add to pan- stir in to mix and leave to cook gently for another 10 minutes.
- When celeriac and parsnips are cooked, but still firmish, consider it cooked!
- Remove from heat and just before serving add crème fraiche, sour crème or yoghurt.
