Celeriac & Parsnip Curry

Ingredients

  • 1 large onion
  • ½ or 2/3 of a celeriac
  • 1 medium parsnip
  • garlic
  • Sunflower oil
  • Curry powder
  • Cumin seeds- roughly ground
  • Coriander powder
  • Turmeric powder
  • Pinch salt
  • 2 table spoons of Crème fraiche/sour cream or plain yoghurt

Celeriac & Parsnip Curry

Method

  • Gently fry onion and garlic with curry powder and spices in a thick bottomed sauce pan.
  •  When onions are soft, peel and roughly grate the celeriac into the pan- add salt, mix thoroughly and put lid on pan and cook very gently for 5 mins
  • Peel and roughly grate parsnip and add to pan- stir in to mix and leave to cook gently for another 10 minutes.
  • When celeriac and parsnips are cooked, but still firmish, consider it cooked!
  • Remove from heat and just before serving add crème fraiche, sour crème or yoghurt.
