Celeriac and Pear Soup


Ingredients
- 4 shallots
- 2 cloves of garlic
- about an inch of ginger root
- 1 celeriac (about 800g)
- 4 pears
- 1 litre of vegetable stock
- parsley for serving

Celeriac and Pear Soup
Method

Heat oil in a large saucepan, add finely sliced shallots, garlic and chopped ginger and cook over a medium heat or about 5 minutes until softened but not coloured.

Add the peeled and roughly chopped celeriac, peeled cored and chopped pears and stock, bring to the boil, then reduce to a simmer and simmer for about 25 mins until the celeriac has softened enough to mash easily.

Liquidise the soup in a blender until smooth.

Season and serve sprinkled with parsley.
