Celeriac and Pear Soup


  • 4 shallots
  • 2 cloves of garlic
  • about an inch of ginger root
  • 1 celeriac (about 800g)
  • 4 pears
  • 1 litre of vegetable stock
  • parsley for serving

Celeriac and Pear Soup


  • Heat oil in a large saucepan, add finely sliced shallots, garlic and chopped ginger and cook over a medium heat or about 5 minutes until softened but not coloured.
  • Add the peeled and roughly chopped celeriac, peeled cored and chopped pears and stock, bring to the boil, then reduce to a simmer and simmer for about 25 mins until the celeriac has softened enough to mash easily.
  • Liquidise the soup in a blender until smooth.
  • Season and serve sprinkled with parsley.
