Celeriac and Apple Bake

  • Pre-heat the oven to 190 C.
  • Chop the celeriac into 4 and use a sharp knife to peel the rough outside.
  • Slice the quarters into 1 cm slices and boil for 10 minutes, until starting to soften.
  • Wash the apples and chop them in half. Remove the cores. It's up to you whether you peel them - you know your audience! Slice the halves into ½ cm slices.
  • Drain the celeriac.
  • While the pan is still warm, use it to mix the olive oil and the honey. This will help melt the honey. Add the celeriac and stir well, to coat all the slices.
  • Arrange a row of celeriac in an oven-proof dish. Then add a row of apple slices. Then continue to alternate, until all the celeriac and apple has been used.
  • Bake for 30 minutes, until the celeriac is soft and the apples are starting to brown.
  • Delicious with lightly steamed green vegetables, such as broccoli or kale.
