Cabbage and Apple Coleslaw


  • 1/2 a cabbage finely sliced
  • 1 red or white onion, peeled and coarsely grated
  • 2 handfuls of spring cabbage, washed and dried
  • 3 crunchy apples, finely sliced
  • sea salt and black pepper
  • 2 tablespoons of mayonnaise
  • Extra virgin olive oil
  • cayenne pepper
  • 4-5 tablespoons red wine vinegar

Cabbage and Apple Coleslaw


  • finely slice your veg and apples (or use a food processor or box grater)
  • Put them into a large bowl and add your mayonnaise, a drizzle of extra virgin olive oil, and the red wine vinegar
  • Season with cayenne and black pepper and salt
  • Mix everything together until you’ve got a perfect coleslaw texture!
