Cabbage and Apple Coleslaw


Ingredients
- 1/2 a cabbage finely sliced
- 1 red or white onion, peeled and coarsely grated
- 2 handfuls of spring cabbage, washed and dried
- 3 crunchy apples, finely sliced
- sea salt and black pepper
- 2 tablespoons of mayonnaise
- Extra virgin olive oil
- cayenne pepper
- 4-5 tablespoons red wine vinegar

Cabbage and Apple Coleslaw
Method
- finely slice your veg and apples (or use a food processor or box grater)
- Put them into a large bowl and add your mayonnaise, a drizzle of extra virgin olive oil, and the red wine vinegar
- Season with cayenne and black pepper and salt
- Mix everything together until you’ve got a perfect coleslaw texture!
