Brown Rice Salad

Ingredients

  • 200 ml uncooked brown rice
  • 6 spring onions
  • 1 red capsicum
  • 100 ml currants
  • 60 g unsalted roast cashew nuts
  • 2 tablesoons sunflower seeds
  • 3 tablespoons chopped fresh parsley
  • 4 tablespoons soy sauce
  • 300 ml olive oil
  • 2 tablespoons lemon juice
  • 1 chopped clove garlic
  • freshly ground pepper, to taste

Brown Rice Salad

Method

  • Cook rice for 28 minutes, stirring frequently then rinse in hot water and mix through chopped spring onions
  • When cool, add currants, chopped capsicum, seeds, nuts and parsley and mix
  • Make dressing from remaining ingredients, pour over salad
  • Make the day before if possible, to allow flavours to develop!
